Pumpkin Cinnamon Spice Applesauce
Did anyone else ever grow up with applesauce as a go to snack? My mom bought it all the time for us as kids and I still love it to this day. Yes, I am a 24-year-old woman who buys the squeeze packs. Honestly, I have no shame because they are so delicious and easy to throw in a lunch or grab on the go.
With fall (and soon to be winter) in full force, I have broken out my instant pot and have gone to town making different recipes in it. This applesauce recipe is made in the instant pot, however, if you don’t own one I assume it could easily be replicated in a crock-pot. When I made this, I chose to peel my apples, as I don’t own an immersion blender and was scared it would turn out too chunky. I also added 1/4 tsp. of ground ginger and 1/4 cup of pumpkin puree for an added kick but the recipe will turn out just a tasty if you choose to leave these items out. The beauty of this recipe is how quick, easy, and healthy it is! Give it a try and let us know what you think!
Ingredients
6 large apples cored and peeled in the flavor of your choice (I used honey crisp!)
1/2 cup of water
1 tablespoon lemon juice
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1/4 teaspoon ground ginger (optional!)
1/4 cup pumpkin puree (optional!)
Instructions
Core, peel, and slice all 6 apples and place into instant pot
Add water, lemon juice, and spices to instant pot. Stir. Close lid and turn valve to “sealing”
Press manual, and adjust cook time to 5 minutes
Allow pot to come to pressure, cooker the 5 minutes, and then let the pot do a natural pressure release (this insure applesauce doesn’t spray through the release valve!)
Once all the pressure has been released, open the lid, stir/mash as needed, and sweeten with maple syrup, honey, or sugar, if desired (I chose to not sweeten mine!)
Enjoy warm and/or refrigerate for later!
