Strawberry, Honey, Goat Cheese Bruschetta

We love to have people over in the summer to grill out so I’m always on the look out for easy dishes to make for a group of people. I’ll admit, I usually just get lazy and run to the store last minute to serve our guests chips and dip as an appetizer. BUT when I’m feeling “fancy” I might whip up a dish like this. And truth be told, its only a 4 ingredient dish so it’s extremely easy to make.

You have to start with a French Baguette which we purchased from Aldi for $1.55 - I mean that’s way cheaper than any bag of chips I’d buy to feed ~6 people. Cut into little slices about 1 cm thick or whatever you prefer. Place them on a tray, drizzle a little olive oil on them and pop them in the oven at about 350 degrees. Leave them in for about 5 minutes or until they get toasted on the top.

Once toasted, remove them from the oven and let them cool for a bit. If they don’t cool, the goat cheese will be super runny so definitely an important step. When they are cooled, put a little smear of goat cheese on each individual piece.. we doubled up on the honey and did a honey goat cheese + honey but plain goat cheese would be delicious too. The honey goat cheese we purchased was also from Aldi for $2.19. (I mean common, so cheap!)

Once the goat cheese is smeared on each piece, put a little drizzle of honey on each one. Feel free to go crazy and just drizzle the whole board if you want. Personally, i hate when honey gets every thing sticky so i did it one by one.

Lastly, chop up a carton of strawberries, i would estimate about a half strawberry chunks for each piece of bread you have. And voila, that it!

Ingredients:

  • French Baguette

  • Goat Cheese (plain or honey)

  • Honey

  • Strawberries

  • Olive Oil

Instructions:

  1. Chop the baguette into small slices. Place them on baking sheet, drizzle olive oil and pop in the over at 350 degrees for about 5 minutes or until they look toasted on the top.

  2. While they are in the oven, shop your strawberries into small pieces.

  3. Remove bread from oven and let cool. Once cool, smear goat cheese onto each slice.

  4. Drizzle honey onto each slice.

  5. Place chopped strawberries onto each slice.

  6. ALL DONE!
