When I think of summer there are so many things that come to mind. Hot, sunny days spent by the pool drinking a margarita only to go home and finish off the night with a mouth watering BBQ dinner. Anyone else think of a similar scenario?

This recipe calls for only 3 ingredients so it’s simple and easy, yet so dang delicious. I think I will continue to make it all year round! Today I will show you how to make this juicy, tender, BBQ pulled pork in your instant pot! I opted to use the meat in a taco but it would be great on a sandwich, nachos, or simply by itself.

First and foremost is the BBQ sauce. Being a Kansas City native, I was breed to love BBQ. It doesn’t matter if it’s Jack Stack, Joe’s KC, Gates, Q39, etc I love them all. For this recipe, however, I decided to try a new BBQ sauce in town - Jone’s BBQ (where all my Queer Eye Fans at?)! I decided to go with their limited edition Pineapple Coconut sauce, which is to die for, but use whatever sauce you prefer.

This recipe calls for one cup or can of Dr. Pepper. Again, this can all be swapped based on your preference. Coke, Pepsi, or Root Beer are a few other choices that would all taste great.

The final and third ingredient would be the Pork. Depending on how many mouths you are wanting to feed, the recipe can be doubled or tripled! I used pork butt and it turned out perfectly!

If you like a little extra seasoning then try adding in an onion and some garlic. If you prefer your meat to be a little sweeter then some brown sugar could be tossed in. If you really like to mix things then it would be fun to use two different types of BBQ sauce, which would definitely enhance the flavor. I prefer the simplicity and easiness of this recipe but there is so much room for customization!

Instant Pot Pulled Pork Tacos

Pulled Pork

Ingredients

  • One and half pounds of pork butt

  • One Cup or can of Dr. Pepper

  • One Cup (1/2) of BBQ sauce (half used in instant pot and half use after cooked)

Mango Salsa

Avocado Dressing

  • For the avocado dressing, I used one I picked up from our grocery store


Instructions

  1. Turn Instant Pot to Saute and let it warm

  2. Cut pork into 4 chunks and add to Instant Pot. Brown on all sides. Turn off sauce mode once all sides have browned.

  3. Add Dr. Pepper and 1/2 cup of BBQ sauce to the pot and stir.

  4. Close the lid to the Instant Pot and ensure pressure release tab is set to sealed.

  5. Cook on manual, high pressure for 30 minutes.

  6. While the meat is cooking, prepare mango salsa according to this recipe.

  7. Natural release for 10 minutes and then release any remaining pressure.

  8. Remove pork from Instant Pot and place in bowl and shred it.

  9. Stir in remaining 1/2 cup of BBQ sauce.

  10. Enjoy!
