Picnic Eats: Deviled Eggs with a Kick and Toothpick Sliders

Given today was the first day below 90 degrees in the past few weeks, we thought a picnic was in order.  Lucky for us, it was also Kansas City’s Big Picnic put on by the Parks and Rec department. (okay, maybe it we were planning to attend even if it was 100 degrees but still celly’ing the cooler temps).

This was our first time attending the event and it was great! Live music, food trucks, putt putt, puppets and MORE.  They seriously had it all.

For our picnic, we decided to make toothpick cheeseburger sliders and deviled eggs with a kick! (aka Sriracha is involved).  See our recipes below!

Deviled Eggs with a Kick:

Ingredients:

  • 12 eggs

  • ½ cup of mayonnaise

  • 1 teaspoon of grainy mustard

  • 1 tablespoon of Sriracha

  • Bonus: 1 tablespoon of bacon grease if you have it

  • For topping: parsley and chili powder

Instructions

  1. Boil the eggs for ~15 minutes. 

  2. Remove from boiling pot and immediately throw into bowl of ice water. 

  3. Strip egg shells and cut the hard egg along the long edge.  

  4. Remove the hard yolk andput into bowl with mayonnaise, grainy mustard and Sriracha. 

  5. Mix the ingredients together and put into zip lock back.  Put a small corner of the bag off to squeeze mixture into the eggs. 

  6. Finally top the eggs with parsley and chili powder!

Toothpick cheeseburgers:

Ingredients:

  • 1 lb of ground beef

  • 1 egg

  • ¼ cup of Panko bread crumbs

  • Sharp cheddar slices

  • Pickles

  • Lettuce

Instructions

  1. Combine the ground beef, egg and Panko bread crumbs

  2. Create ~1 inch patties with mixture. 

  3. Season with your favorite grilling seasoning or salt and pepper

  4. Grill

  5. Once the patties are grilled top with cheese slices, pickle and lettuce
