Salty Iguana - Kansas City Mexican

If I could have one food for the rest of my life, it would be chips and queso. So it’s no surprise that when lunch decision is on me, there’s a high probability wee are going to a local Mexican place. This weekend we went to Salty Iguana - a Mexican restaurant started in Prairie Village that has now expanded to 5 locations around the Kansas City area.

The staff was incredibly welcoming and attentive - A+ to them on service. The inside of the restaurant is colorful and may i say - an Instagrammers dream of backgrounds. (peep the beer picture with the mosaic wall).

The queso or as they call it, Iguana Dip, hit my high standards. We got the small and it was more than enough for the two of us. My biggest flaw is always filling up on salsa and queso before the meal even arrives.. anyone else with me on this? We also got the chicken fajitas, cream cheese enchilada and blue corn tacos. All delicious.

Fun fact - Salty Iguana does Taco Monday. I presume it’s because they were too excited to wait for the blue corn tacos until Tuesday. Per our waiter - they are a local favorite (and we agree). Check out their website for menu and specials for each night of the week.
