The temperatures are dropping, COVID-19 is still in full swing, and it’s a political war zone all around us - seems like the perfect line up to stay home, forget everything happening in the world, and get creative in the kitchen, does it not? Our fruity pop tarts were such a hit so we decided to bring you another version.

I think the name of these delicious breakfast pies speak for themselves. On the outside you have a perfectly flaky pie crust that is topped with the infamous Trader Joe’s “Everything but the Bagel” seasoning and on the inside you have soft cream cheese filling. They are super easy to assemble and require only a handful of ingredients. The are the perfect way to spice up you usual Saturday morning pancake breakfast!

I enjoyed on fresh out of the oven and it truly has the melt in your mouth effect! My advice is to make them and eat them right away because I personally did not think they tasted the same leftover the next day.

INGREDIENTS:

  • 1-2 packages of ready-to-bake pie crust ( each box makes about 6 pop tarts)

  • 1 block of plain cream cheese (can sub whatever kind you prefer though)

  • 1 egg

  • “Everything but the Bagel” seasoning (purchase at Trader Joe’s, Costco, Target, etc.)

DIRECTIONS:

  1. Pre-heat oven to 400° F. and line baking sheet with parchment paper

  2. In a small bowl, beat the block of cream cheese with a hand mixer, set aside for later

  3. Crack egg into a second small bowl, whisk, and set aside for later

  4. Flour a large work surface and lay out your pie crusts. Use a pizza cutter to remove rounded edges, and then cut each remaining crust into 6 equal-sized rectangles. This will create a total of total of 12 rectangles if using one box of pie crust, or 24 rectangles if using two boxes of pie crust. Pictured above.

  5. Place half of the rectangles to a baking sheet.

  6. Add 2 Tbsp. of desired cream cheese filling to each rectangle.

  7. Place remaining rectangle cutouts on top of each other and use a fork to crimp the edges together in order to seal in cream cheese

  8. Take the whisked egg and brush on top of each formed pop-tart

  9. Sprinkle desired amount of “Everything but the Bagel” seasoning on to each egg brushed pop-tart

  10. Place baking sheet into the preheat oven

  11. Bake for 15-18 minutes, or until crust is lightly golden brown

  12. Remove from oven and cool

  13. ENJOY!
