Skillet Peach Whiskey Cobbler
Today we say rabbit rabbit and welcome September 2022. Does anyone else agree that September is the little kid caught in between a game of monkey in the middle? It’s strange when it’s 85+ degrees outside but the pools are closing up and pumpkin spice goods are starting to hit the shelves. If you’re anything like me, you want summer to last forever, but you’re also ready to welcome fall.
This cast iron peach cobbler tastes like my exact thoughts described above. The linger of summer in the sweet juicy peaches but the welcoming of fall with the hint of whiskey and warmth of the dish. It will be the perfect addition to a labor day BBQ or football tailgate. It’s decadent and delicious!
Ingredients
Peach mixture
Six large + ripe peaches
1/4 C. Whiskey (we love J.Reiger in KC)
1/2 tbsp lemon juice
1 tsp vanila
1/2 C. brown sugar
2 tsp cinnamon
2 tbsp of corn starch
1/2 stick butter (**Note - will not be used in peach mixture. Will be melted into cast iron)
Top Crumble
1 + 1/2 C. flour
2 tsp baking powder
1/2 tsp salt
1/4 C. brown sugar
1 stick butter
3/4 C. heavy whipping cream
Optional Ingredient
Vanilla ice cream :)
Instructions:
Heat oven to 375 F
Wash and dry peaches.
Slice peaches into thin slices. Place all sliced peaches to a bowl.
Add 1/4 cup whiskey, 1/2 tbsp lemon juice, 1 tsp vanilla, 1/2 cup brown sugar, 2 tsp cinnamon, and 2 tbsp cornstarch into the bowl with the peaches.
Use large spoon or hands to coat peaches with added ingredients. Once peaches are evenly coated, set bowl aside for later.
In a food processor or large bowl add 1.5 cups flour, 2 tsp baking powder, 1/2 tsp salt, 1/4 cup brown sugar. Pulse until combined.
Add 1 stick of butter, cubed, to mixture. Pulse until crumbles form.
Add 3/4 cup heavy cream to mixture. Pulse until dough forms. Set aside for later.
Place cast iron skillet over medium heat on stove. Melt 1/2 stick butter in skillet.
Once butter has melted, pour peach mixture into skillet and evenly distribute.
Cook peaches until they soften - around 5 minutes. Stir Occasionally.
Once peaches soften, drop dough by tablespoons onto peaches. **It’s okay if not every inch is covered because dough will spread while cooking.
Sprinkle desired amount of sugar on top of dough.
Place in oven with baking sheet on rack below to catch drips
Bake for 40 minutes, or until the top is browned
Let it set to cool
