Mini Shepard's Pie

It’s officially back to school time and back to school means back to all the busyness that comes a long with a new school year! Luckily, we are here to bring you an easy dinner that adults and littles will equally love! It comes in the form of a cupcake and is bursting with cozy flavors.

The key to this easy recipe is the Mostly Made Shepard’s Pie filling. You may remember our Enchilada Pasta using their enchilada filling. For those unfamiliar, Mostly Made is a company that sells pre-made fresh meal starters so that cooking dinner is quick and easy! These mini Shepard’s pie will give you a serving of vegetables without any chopping or prepping necessary .. can you say AMAZING!? See where you can find Mostly Made fillings HERE!

These mini Shepard’s pie have made our “favorites” list due to the simplicity of them. This recipe only requires 4 ingredient. It’s not every night you can prepare such a rich delicious dish with so few ingredients hardly having to do any work. Give it a try and let us know what you think!

Ingredients:

  • 1 box of Mostly Made Shepard’s pie filling

  • 1 lb ground beef

  • 1 can of jumbo biscuits

  • 28 oz bag of frozen mashed potatoes (or prepared mashed potatoes of your choosing)

Instruction :

  1. Preheat oven to 400 degrees

  2. Fill cupcake tin with silicone liners

  3. Open can of biscuits and cut each biscuit round in two (through the middle) so you end up with twice as many thinner biscuit rounds (pictured above)

  4. Press biscuit into the bottom and sides of silicone lined muffin cup

  5. Once oven is preheated bake 6 minutes - if biscuits rise too much to hold meat then press biscuit down immediately after removing from oven

  6. While biscuits cook, prepare prepare mashed potatoes as stated on the package

  7. In a skillet, brown ground beef over medium to high heat - Once browned, add in Mostly Made Shepard’s Pie filling and simmer until hot

  8. Fill each biscuit with meat mixture

  9. Add one "ice cream scoop” of mashed potatoes on top of biscuit + meat

  10. Place in oven, turn temperature up to 425 degrees, and bake 12 minutes

  11. Broil for 2 minutes to add color and crisp on top

  12. ENJOY!
